After 3 full days of berry picking I ended up with an estimated 12 lbs of Blackberries. I put them into large freezer bags and froze them. This breaks down the cell wall and kept them from spoiling as I accumulated a critical mass of berries. I did a lot of research and visited SF Brewcraft for all my final ingredients and supplies. The staff there helped me to avoid critical mistakes which would have ruined my wine. The suggested a better yeast and gave me tips to minimize oxidation.
